Blueberry & Watermelon Salad

BC blueberry season is the best because you can add them to all your meals. UBC Chefs are always trying and creating new recipes for menu ideas.

Recipe from Chef Demo Day 1 with Executive Chef David Speight

Yield: 4

Ingredients

  • 1 cup watermelon (seeded & diced)
  • 1 papaya (seeded & diced)
  • 1 cup fresh BC blueberries
  • 1 cucumber (diced)
  • 1 bunch green onion (sliced)
  • 1 red pepper (seeded & diced)
  • 1 yellow pepper (seeded & diced)
  • 1 jalapeno peppers (seeded & diced) 
  • 1 tsp fresh rosemary (fine chopped)
  • ¼ cup fresh parsley (fine chopped)
  • 1 ear fresh ginger (peeled & grated)
  • 4 limes (juice of)
  • Pinch sea salt
  • Pinch cracked black pepper

Method

  1. wash blueberries
  2. place prepped watermelon, papaya, cucumber, peppers, green onion in a mixing bowl
  3. add blueberries
  4. add grated ginger
  5. add the juice of the limes, fresh herbs and sea salt & pepper
  6. mix well
